In cold cold weather, my uncle would say, it's hog killing weather.. after they kill the hogs got them dressed for the smokehouse, they took the fat a lot of the fat off the hog and fried it in little bitty pieces sometimes with the skin on it. these were called cracklings. I eat them in cornbread. For those of you who are on the keto diet you can eat these too.
